This easy recipe for sticky Chinese chicken in the crockpot will make you feel like you're at the Chinese buffet without leaving home! This recipe is fantastic, and can feed a crowd.

  • 2 1/2 lbs. boneless skinless chicken breasts
  • 3 Tbs. sesame or peanut oil
  • 1 lg. red onion, diced
  • 2 lg. red bell peppers, diced
  • 3 lg. carrots, diced
  • 1/2 C. ketchup
  • 1/2 C. hoisin or teriyaki sauce
  • 4 cloves garlic, minced
  • salt and pepper to taste

Place all of the ingredients into the crockpot and cook on low for 6-8 hours or on high for 4-5. Serve over a bed of rice and ladle the extra sauce over the top of the chicken just prior to serving.
