  • 2 stalks lemongrass, chopped
  • 3 shallots, diced
  • ¼ C. cilantro, chopped
  • 2 green onions, diced
  • 1 T. fresh grated ginger
  • 1 jalapeno, seeded and diced
  • 1 carrot, peeled and shredded
  • ¼ C. + 2 T. fish sauce, divided
  • Salt and pepper to taste
  • 1 ½ lb. ground pork
  • ¼ C. lime juice
  • 3 T. vegetable oil
  • 2 T. sugar
  • 3 T. chili paste

Preheat oven to 400 degrees. In a food processor, pulse together lemongrass, shallots, cilantro, green onions, ginger, jalapeno, carrots, salt, pepper, and 2 tablespoons of fish sauce. Transfer mixture to a large bowl and use your hands to add in pork. Once well combined, roll into balls and place along a baking sheet lined with parchment paper. Bake for 25 minutes until golden and cooked through. In a bowl, whisk together remaining fish sauce, lime juice, vegetable oil, sugar, and chili paste. Toss meatballs in sauce and serve.
