Ingredients
- 8 oz. canned pineapple chunks
- 2 c. cubed beef
- 1 green pepper, cut in thin strips
- 1/3 onion, sliced
- 2 tbsp. oil
- 1/2 c. brown sugar, packed
- 1/2 c. chicken broth
- 1/3 c. tomato ketchup
- 3 tbsp. rice vinegar
- 3-4 tbsp. flour

Directions
Drain the pineapple and save the juice. In a big wok, saute the beef, peppers, and onions in the hot oil. Combine the water, sugar, tomato ketchup, flour, and rice vinegar. Boil and add the pineapple juice. Stir at a boil until thickened. Add the beef, peppers, and onions along with the pineapple chunks and simmer for 20 minutes. Serve over a bed of rice.
