Stir Fried Asparagus

Ingredients
- 3 Tbs. olive oil
- 1 lb. asparagus
- salt
- pepper
- 2 Tbs. chopped parsley
Directions
Trim off base of asparagus. Cut it into 2-inch lengths. In a large skillet, heat oil over medium heat. Add asparagus and salt and pepper to taste. Cook for 5 minutes, stirring often, or until asparagus is lightly browned. Cover the pan and cook for 2 minutes. Stir in parsley, then serve.
