Stir-Fried Veggie Pasta

This is a great dinner that can be thrown together in minutes!

4 servings


  • 2 Tbs. olive oil
  • 1 garlic cloves, pressed
  • 1 sm. onion, cut into wedges
  • 1/2 C. fresh broccoli, chopped
  • 1/2 C. fresh cauliflower, chopped
  • 1 tomato, cut into wedges
  • 2 C. of sliced mushrooms, sliced zucchini, sliced squash, or a combination
  • red pepper flakes, to taste
  • salt and pepper, to taste
  • 3/4 lb. pasta of your choice, cooked
  • Parmesan cheese, grated

Heat oil in a skillet or wok.  Add garlic.  Stir-fry all vegetables except tomato until hot and slightly tender.  Add tomato, red pepper flakes, salt, and pepper.  Heat through.  Serve over pasta.  Top with Parmesan cheese.
