Stir-Fry Zucchini with Cheese

Ingredients
- 1 medium (or 2 sm.) zucchini
- 2 Tbs. salad oil
- 1 med. onion, sliced
- 1 dash pepper
- 1/4 lb. American or Cheddar cheese
Directions
If zucchini is tender, wash only, and use the skin, too. Slice in thin slices. Put oil and onion in frying pan and cook until clear. Add zucchini. Reduce heat and cook until zucchini is tender. Stir as needed. Cut cheese in thin pieces or grate. Add to zucchini. Cover and heat only until cheese melts.
