Stovetop Taco Casserole

For a complete meal with a mild kick, try this Mexican-inspired beef and rice casserole.

Ingredients

  • 1lb ground beef
  • 1/2 C. chopped onions
  • 1 1/2 C. uncooked quick cooking rice
  • 1 C. mild picante sauce
  • 1/2 C. water
  • 16 oz. can whole tomatoes, cut up
  • 12 oz. can green giant Mexi-corn [whole kernel golden sweet corn with red and green sweet peppers]
  • 6 oz. can tomato paste

Directions

In a large skillet brown ground beef and onion, drain well. Stir in remaining ingredients. Cook until mixture comes to boil; boil 2 minutes, stirring occasionally. Remove from heat. Cover and let stand 5 minutes.

Makes 4 servings.
