Strawberries picked at the peak of freshness add a fantastic element of sweetness to this salad, pairing beautifully with the tangy granny smith apples and fresh baby spinach. The almonds and poppy seeds really round everything out by adding a bit of crunch!

  • 2 C. strawberries, sliced
  • 1 C. granny smith apples, chopped
  • 1/2 C. slivered almonds, toasted
  • ½ C. Gorgonzola cheese, crumbled
  • 8 oz. baby spinach
  • 4 T. balsamic vinegar
  • 1 T. poppy seeds

In a medium bowl, combine strawberries, apples, almonds, and poppy seeds.
In a separate larger mixing bowl, drizzle balsamic vinegar over the greens and toss gently to coat. Continue tossing until the greens are all evenly slicked with dressing.
Gently toss the strawberries, apples, almonds, and poppy seeds with the spinach.
Transfer the salad to a large serving bowl.
Sprinkle Gorgonzola over the top before serving.
