  • For Salad
  • 3 C. mesclun lettuce
  • 1 C. strawberries, quartered
  • 1 orange, segmented and chopped
  • ¾ C. cherry tomatoes, quartered
  • ½ C. sliced almonds, toasted
  • For Dressing
  • 1 small shallot, finely chopped
  • ¾ C. olive oil
  • ¼ C. Champagne vinegar
  • 3 T. fresh lemon juice
  • 2 T. fresh orange juice
  • ¼ tsp lemon zest
  • Kosher salt
  • freshly ground black pepper

In a large mixing bowl, combine lettuce, strawberries, orange pieces, and cherry tomatoes.
For the dressing, combine the shallot, olive oil, vinegar, lemon juice, and lemon zest in a blender. Pulse for 30 seconds or until well combined.
Season dressing with salt and pepper to taste.
Pour dressing over lettuce, tossing to coat all ingredients.
Top with almonds before serving.
