  • 1 package cream cheese
  • 2/3 cup granulated sugar
  • 1/4 cup confectioners' sugar
  • 1/2 tsp vanilla extract
  • 1 cup fresh strawberries: ¼ cup sliced lengthwise, ¾ cup mashed
  • 1 cup heavy cream
  • 1 1/2 cups finely ground graham cracker crumbs
  • 6 tablespoons butter, melted

Crush your graham crackers into a crumbly powder. Then combine these crumbs with ⅓ cup of sugar and melted butter. Press this mixture into an 8 or 9-inch skillet.
Bake at 375 F for 5 minutes. And allow it to cool.
As your crust is cooling, stir your softened cream cheese, ½ cup white sugar, and your vanilla extract in a large mixing bowl until the mixture is silky.
Then, stir your mashed strawberries into your cream base.
Whisk heavy cream and your confectioners sugar in a separate mixing bowl. You may want to use an electric mixer if you have it. Beat this mixture until stiff peaks begin to form.
Fold your cream cheese mixture into your whipped cream until it is an even combination.
Spoon strawberry mixture into graham cracker crusted skillet. Then, place the sliced strawberries on top in a radial pattern from the center. Chill your pie for at least 3 hours before serving.
