Ingredients

  • 2 qt. fresh strawberries, sliced and divided
  • 1 C. sugar
  • 3 Tbs. cornstarch
  • 3/4 C. water
  • 2 tsp. lemon zest
  • 1 Tbs. fresh lemon juice
  • Crust:
  • 1 1/4 C. graham cracker crumbs
  • 1/3 C. butter
  • 1/4 C. sugar
  • 1 Tbs. lemon zest
  • whipped cream

Preheat oven to 350 degrees. 

Prepare crust: Melt butter.  Add sugar, graham cracker crumbs and lemon zest.  Press mixture firmly in bottom and up sides of a 9-inch pie pan.  Bake 8-10 minutes.  Cool. 

Puree 1 quart of strawberries to make 2 cups of puree.  Combine sugar and cornstarch in saucepan.  Add water and strawberry puree.  Simmer, stirring constantly until thickened.  Remove from heat.  Add lemon juice and lemon zest.  Cool slightly.  Pour over remaining sliced berries in prepared pie shell.  Refrigerate until serving time.  Serve garnished with whipped cream.
