This no bake Strawberry Pineapple Cheesecake is the perfect summer dessert. While it may look complicated, it really comes together quickly and is a creamy blend of two flavors that work well together, pineapple and strawberries. When combined with the fluffy, sweet and tangy cheesecake mixture, the fruity flavor is mellowed and makes the perfect dish.

  • 1 1/2 C. graham cracker crumbs
  • 1/3 C. butter, melted
  • 2 8 oz. packages cream cheese
  • 1/2 C. sugar
  • 2 C. strawberries, crushed
  • 1/2 C. strawberry juice
  • 1 20 oz. can crushed pineapple, drained
  • 4 Tbs. cornstarch
  • 4 Tbs. water
  • 1 C. strawberries, sliced
  • 2 C. whipped cream

Mix the butter and graham cracker crumbs and press the mixture into a 9 inch springform pan
In a large bowl, beat the sugar and cream cheese until the sugar is dissolved
Add the pineapple and stir until incorporated
Fold the whipped cream into the cheesecake mixture and stir in the strawberries
Spread the mixture over the crust. Refrigerate overnight
In a small pot, boil the strawberry juice
Mix the cornstarch and water and whisk into the juice
Continue to cook, stirring, until the mixture thickens
Stir in the cup of sliced strawberries and let cool
Pour over the cheesecake before serving
