Nothing tastes better on a scorching hot summer day then a cool, refreshing popsicle. This strawberry popsicle recipe adds lemon zest and lemon juice, which help to bring out the flavor of the strawberries!

  • 1 1/2 lb. fresh strawberries
  • 3 Tbs. granulated sugar
  • 2 Tbs. lemon juice, freshly squeezed
  • 1 Tbs. lemon zest

Combine the sugar and the strawberries together and let them get mixed and get thick. This may take 10-15 mins
Now, add lemon zest and lemon juice to the mixture and process the whole until smooth in a food processor
Now, the strawberry purée that is being prepared needs to be poured down the molds (with wooden sticks in place) and placed in the freezer
Freeze for three hours until the popsicles are solid
Take out and place the mold in the outside temperature for a few moments to let the popsicles come out
