  • 1 C. all-purpose flour
  • ¾ C. old fashioned rolled oats
  • ¾ C. packed light brown sugar
  • ¼ tsp. salt
  • 10 Tbs. unsalted butter, cold and diced into small pieces
  • 4 ½ C. fresh strawberries, sliced and stemmed
  • 4 C. fresh rhubarb, sliced pieces
  • ¾ C. sugar
  • ¼ C. red wine, dry
  • 2 Tbs. cornstarch
  • 1 tsp. vanilla extract
  • 2 orange zest (+ ¼ C. juice)

Preheat the oven to 400 degrees. In a mixing bowl, combine the flour, brown sugar, butter, salt, and oats. Butter a baking dish and fill it with the fruit, sugar, wine, cornstarch, and vanilla. Mix everything together so that it’s evenly coated. Top the mixture with the flour crumble. Bake the rhubarb for 45 minutes until it’s golden brown.
