Whether the weather outside is blazing hot or freezing cold, you'll love this popsicle treat. It has the perfect blend of sweet and tart while not being too over the top. Best of all, they'll will cool you off in an instant.

  • 2 1/2 C rhubarb, diced
  • 2 1/2 C strawberries, diced
  • 1/3 C sugar
  • 2 Tbs. honey
  • 1-2 tsp. lime zest
  • 1 Tbs. water

Place rhubarb, strawberries, sugar, honey and water in a pan over medium heat. Stir until ingredients are combined and sugar has dissolved. Cook for 20 minutes. Remove from the heat and let cool for about 10 to 15 minutes.

Once the mixture is cooled, add the lime zest and stir until it is incorporated.
Pour mixture into popsicle molds and place a popsicle stick about an inch deep in the mold.

Place popsicle mold into the freezer and freeze for 6 - 8 hours, or overnight.
