Strawberry rhubarb muffins are a great addition to any morning! The taste of fresh strawberries paired with the tartness rhubarb is the perfect pairing! Serve with a hot cup of coffee in the morning or after dinner as a dessert!

  • 1/2 cup canola oil
  • 1 cup milk
  • 2 eggs
  • 1 tbs vanilla
  • 1 cup sugar
  • 1/2 tsp salt
  • 1 cup strawberries, chopped
  • 2 tbs baking powder
  • 3/4 cup rhubarb, chopped

In a small bowl, add flour, sugar and salt. In a separate bowl, add the eggs, milk and vanilla, whisk thoroughly. Combine the two mixtures and stir until an even and smooth paste is formed. Mix in the strawberries and rhubarb. Pour the paste into the muffins cups, filling about half the cup. Bake for 15 minutes and cool.
