  • 1 cup of strawberries, diced
  • 1 teaspoon of vanilla extract
  • 2 cups of flour
  • 1/3 cup of white sugar
  • 1 tablespoon of baking powder
  • 1/2 a teaspoon of salt
  • 6 tablespoons unsalted butter, cut into chunks

Preheat the oven to 425 degrees and line a baking sheet with parchment paper; Next, place the strawberries on paper towels to absorb liquid and set these items aside.
In a different bowl, add the flour, sugar, baking powder, butter, vanilla, and salt. Use a pastry blender to cut in butter until the mixture looks like coarse, pea-sized crumbs. Then stir the strawberries in, and gently toss the ingredients. Quickly stir everything together until it is blended well and let the dough to rest for 2 minutes.
Next put the dough on a lightly floured surface and knead until it is smooth and satiny. Transfer the dough to a baking sheet and pat it into an 8-inch round. Use a serrated knife to cut the dough into wedge-shaped pieces. Separate the wedges on the baking sheet, and spread them apart.
Bake the wedges in the oven until the tops are light brown and crusty or for 16 to 18 minutes. Then remove them from the oven and let them cool off for 20 minutes.
They are now ready to eat!
