These tarts are made with whipped cream and strawberries. The whipped cream as a bit of sweetness to the beloved strawberry!

  • 1 box of mini tart shells
  • ½ a cup of strawberries
  • 1 tablespoon granulated sugar
  • 1 cup heavy whipping cream, whipped
  • ½ a package of cream cheese, softened
  • 2 teaspoons lemon zest
  • 1 tablespoon of fresh lemon juice

Preheat oven to 350°F.
Bake the mini tart shells in the oven until lightly browned or for 15 to 20 minutes. Remove tart pans to a wire rack, and let them cool completely (about 30 minutes).
Beat the cream cheese, lemon zest, lemon juice and sugar, and beat until everything is well blended. Gently fold the whipped cream into cream cheese mixture until incorporated. Spoon about 5 tablespoons of the cream cheese mixture into each tart shell. Cover tarts with plastic wrap, and chill for at least 4 hours.
Top each tart with strawberries and then serve!
