  • 2 pkgs. graham crackers, crushed
  • 11 T. unsalted butter, melted
  • 8 oz. cream cheese, softened
  • 1/2 C. sugar
  • 1 C. sour cream
  • 2 tsp. vanilla extract
  • 8 oz. whipped topping, thawed
  • 1 1/4 C. fresh strawberries, halved
  • 1/4 C. sugar
  • 1 lime, zested
  • fresh strawberries for garnish

In a large bowl, combine graham cracker crumbs and melted butter until well mixed. Press mixture into bottom of a 9-inch springform pan and place in freezer for 10 minutes. In a large bowl, combine cream cheese, sugar, sour cream, and vanilla until smooth. Stir in whipped topping and pour over cooled crust. In a blender, puree the strawberries, sugar, and lime zest. Pour on top of cheesecake and garnish with fresh strawberries. Refrigerate for 2 hours.
