Streusel Topped Blueberry Muffins

I got this recipe from my sister-in-law several years ago. I make these whenever the whole family is in town. They love them! They are really yummy.

Ingredients

  • 1 C. milk
  • 1/4 C. vegetable oil
  • 1/2 tsp. vanilla
  • 1 egg
  • 2 C. flour
  • 1/3 C. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 C. fresh or frozen blueberries
  • Streusel Topping:
  • 2 Tbs. cold butter
  • 1/4 C. flour
  • 2 Tbs. packed brown sugar
  • 1/4 tsp. ground cinnamon

Directions

Heat oven to 400 degrees. Grease muffin pan or use paper baking cups. Prepare streusel topping and set aside.

Beat oil, milk, vanilla and egg in large bowl. Stir in flour, sugar, baking powder and salt all at once, stir until flour is just moistened (batter will be lumpy). Fold in blueberries. Divide batter among muffin cups. Sprinkle with 2 tsp. streusel topping.

Bake 20-25 minutes or until golden brown. Remove to rack. Serve warm.

  • My family loves streusel civered muffins, but I'm the only one who loves blueberries! So I subbed in raspberries, and they were just as good.
