Ingredients
- 3 lbs. string beans
- 5 onions, chopped
- 1 C. water
- 1 green pepper, chopped
- 2 lg. carrots, thinly sliced
- 2 Tbs. olive oil
- 2 lg. potatoes, sliced in quarters
- 3 Tbs. parsley, finely chopped
- 1/2 C. tomatoes
- 2 Tbs. butter
- salt
- pepper
Directions
Clean and cut string beans in halves. Wash and drain. Place all vegetables in medium saucepan. Top with parsley. Add butter, oil, and 1 C. water. Salt and pepper to taste. Cover and cook over high flame until the boiling point is reached. Lower flame to medium and continue cooking for 45 minutes until vegetables are tender.
