Stuffed and Roasted Turkey

Ingredients
- 20 olives, pitted and chopped
- 20 chestnuts, roasted, skinned and chopped
- 1 lb. sweet Italian sausage, skinned and chopped
- 1 9-lb. turkey
- 4 slices fat bacon
- salt
- pepper
- 2 Tbs. olive oil
Directions
Mix olives, chestnuts and sausage. Stuff turkey cavity with mixture and sew closed. Place turkey in roasting pan, lay bacon slices across breast, season with salt and pepper, and pour oil over all. Cook in oven at 300 degrees for 2 hours. when turkey is done, remove bacon strips, sprinkle turkey with flour and pour pan fat over it. Return to oven for 10 minutes. Repeat basting 3 times more. Pour fat slowly over flour, but don't remove it. Continue cooking for 30 more minutes.
