  • 3 large bell peppers, cut in half
  • 2 Tbs. olive oil
  • 1/4 C. tomatoes, chopped
  • 1/4 C. green peppers, chopped
  • 1/4 C. yellow peppers, chopped
  • 1 C. onion, chopped
  • 3 Tbs. fresh parsley, chopped
  • 2 garlic cloves, chopped
  • 1/2 C. white rice, cooked
  • 1 tsp. sea salt
  • 1/2 tsp. ground black pepper
  • 1/2 C. tomato sauce
  • 1/2 C. bread crumbs
  • 1/2 C. parmesan cheese, grated
  • 1 egg, beaten

Preheat oven to 350 degrees F. In a large pan with oil over medium high heat, saute vegetables, parsley and garlic until tender. Place vegetables in large mixing bowl. Add rice, salt and pepper. Mix well. Add remaining ingredients. Fill pepper halves with mixture. Bake peppers for 1 hour. If you desire, top with more tomato sauce.
