  • 1 lb of chicken
  • 1 onion, chopped
  • 1 garlic, minced
  • 1.5 c. of salsa sauce
  • 1 package of cannelloni
  • 1 c. of vegetable broth

Cook cannelloni according to the directions on the package. Saute chicken in the olive oil until golden, add onion, carrot, minced garlic in a large saucepan. Cook for 15 minutes, turning occasionally. Add vegetable broth and salsa, mix well. Simmer for 40 minutes, until the chicken is cooked through. Stuff cannelloni with the mixture evenly, pour salsa sauce over the dish and serve immediately.
