  • 2 pork tenderloins
  • 6 oz feta cheese
  • 1 red pepper
  • 1 green pepper
  • ½ C sundried tomatoes
  • 1 tsp dried oregano
  • 1 T. fresh parsley
  • 1 clove garlic
  • 3 T. olive oil
  • Salt (to taste)
  • Pepper (to taste)

Preheat oven to 350 degrees. Cut the tenderloin lengthwise coming ½ inch from cutting all the way through. Lay the tenderloins flat, cover with a plastic bag and flatten to ¼ inch thick with a mallet.

Prepare the pork filling by julienning the red and green peppers, mincing the garlic and chopping the parsley. Layer feta, peppers, parsley, garlic, sundried tomatoes, oregano, salt, and pepper over the flattened tenderloins.

Roll the pork lengthwise and brush sides with olive oil. Sear the tenderloin for 2 minutes on each side to create a nice color. Season pork with salt and pepper and place in the oven for 25 minutes. Let cool for 5 minutes before servings.
