Here's another fun challenge for your taste buds! These red hot chili peppers are stuffed with a juicy, savory meat.

  • 8 red chili peppers
  • 1 lb. ground beef
  • 8 tsp. Pecorino Romano, grated
  • 1/4 C. fresh basil, shredded
  • 1 Tbs. olive oil
  • 1/2 C. Italian-style dry bread crumbs
  • 1 jar marinara sauce

Preheat oven to 350 degrees. Cook the beef in about a Tbs. of olive oil over medium heat. When beef is room temperature, mix it with half of the romano, the shredded basil and bread crumbs. In a medium bowl, mix together the beef, romano cheese, basil, bread crumbs. Stuff sliced peppers with the sausage mixture. Cover bottom of baking dish with marinara sauce and put peppers on top of sauce. Place on a baking sheet and bake for about 15 to 20 minutes or until the stuffing is lightly brown.
