Try these stuffed jalapeño peppers this summer. You are able to be as creative as you’d like with this recipe. Add grains and veggies of your choosing to create a flavor explosion.

  • 4 poblano peppers, halved lengthwise, ribs and seeds removed
  • 2 T. vegetable oil
  • 12 oz. provolone
  • 5 T. balsamic vinegar
  • 1 C. bacon

Preheat the oven to 375 degrees. Heat a large skillet and add vegetable oil. Place the half of the poblanos and cook until they get soft, then remove the peppers to a baking sheet. Repeat the same step for the rest of the poblano peppers. Season some salt to the peppers and then put the slices of provolone on them. Heat the peppers in the oven and wait around 8 to 10 mins. Sprinkle bacon bits and drizzle with balsamic vinegar.
