Stuffed Lobster Tails

- 4 lobster tails
- 1 C. dry bread crumbs
- 3 tbsp olive oil
- 2 Tbs. chopped parsley
- 1 garlic clove, finely chopped
Preheat oven to 450 degrees.
Remove the thin white shell that covers the underside of each tail to expose the meat. Pull out and remove the dark vein in the tail.
In medium bowl, mix together bread crumbs, parsley, garlic and salt & pepper. Drizzle olive oil over meat in lobster tails, then remove meat from tails and toss in bread crumbs until well coated.
Stuff meat back in tails and place tails in large roasting pan and bake for 12-15 minutes.
