Stuffed Manicotti

This is a stuffed noodle Italian dish that my mom (whom I love very much and miss as she lives in Texas) taught me to make. She knows it is one of my favorites. Love you Mom.

Ingredients

  • 1-2 lbs. hamburger meat
  • 5 hot Italian sausage links
  • 1-2 pkgs. manicotti noodles
  • 1-2 cans spaghetti sauce
  • 1-2 pkgs. shredded mozzarella cheese

Directions

In a large pot, bring half a pot of water to a boil. Add noodles, boiling for 10 minutes or until tender. While boiling water and cooking noodles, fry up hamburger meat and Italian sausage in a skillet until cooked through. Drain water off noodles and drain grease from meat mixture. Pour half a can of spaghetti sauce in bottom of cake pan and spread to cover entire bottom. Stuff meat mixture into noodles and  place in the pan in a single layer across. Use all meat and noodles. Spread any leftover meat cross top of noodle layer. Pour the rest of the  spaghetti sauce over the top. Sprinkle a thick layer mozzarella cheese over the top. Heat oven to 350 degrees and place pan of manicotti in oven for 15-20 minutes. Serve once cheese is melted.
