  • 1 lb. ground beef
  • 1/2 C. rolled oats
  • 1 egg, slightly beaten
  • 1/3 C. finely chopped onion
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. Worcestershire sauce
  • 1/3 C. milk
  • 1/2 C. bread crumbs
  • 1 C. cheese
  • 2 C. mashed potatoes
  • 1 C. BBQ Sauce

Combine all ingredients, except the bread crumbs, cheese, mashed potatoes, and BBQ sauce, in a medium bowl. Lay out a piece of wax paper and sprinkle the surface with bread crumbs. Form the meat mixture in a rectangle on top of the bread crumbs. Sprinkle cheese over meat mixture. Spread mashed potatoes over the cheese leaving about 1 inch around the sides. Using the wax paper to get it started, roll the meat in jelly roll fashion with the potatoes on the inside. Seal the edges and put in a lightly greased loaf pan. Bake for 45 min on 350 for 40 min. Take the meatloaf out of the oven and pour BBQ Sauce on top. Return the meatloaf back to the oven and cook an additional 5- 10 min.
