  • 1 Tbs. butter, divided
  • 7 eggs
  • 1/4 tsp. garlic salt
  • 1/8 C. onion, chopped
  • 1/8 C. mushrooms
  • 2 tbsp parsley
  • 1/2 C. shredded Monterey Jack cheese

Beat eggs and garlic salt.  Add butter to skillet; pour in eggs. Continue cooking and stirring until eggs are the consistency of scrambled eggs.  Combine mushrooms and onion; stir into eggs.  Sprinkle with cheese.  Cover and cook over low heat until heated through, 5 to 8 minutes.  Sprinkle the parsley on top and enjoy.
