Stuffed Peppers

I never cared much for stuffed peppers until I tasted this recipe. Homemade cornbread or corn pudding is a nice accompaniment to this dish.

Ingredients

  • 2 large or 4 medium green peppers
  • 3/4 lb. ground turkey
  • 1/3 C. onion, minced
  • 1 tsp. garlic, minced
  • 1/3 C. regular rice
  • 1 Tbs. Worcestershire sauce
  • 1 can Ro-tel tomatoes
  • 1/2 tsp. basil or oregano
  • 1/2 C. shredded cheddar cheese

Directions

Halve peppers lengthwise, remove stems, core and seeds. Parboil 5 minutes and drain inverted on paper towels 5 minutes. Meanwhile brown turkey with onions and garlic. Drain if necessary. Stir in tomatoes, Worcestershire, rice and herbs. Bring to boil, cover and simmer 15-18 minutes or until rice is tender. Stir in 1/4 C. cheese. Fill peppers with turkey mixture in an 8x8 pan, surrounding peppers with any remaining turkey.  Bake at 375 degrees about 15 minutes or until heated through. Top with remaining cheese and let stand about 2 minutes before serving.

  • Like AlDente, I didn't precook ingredients. Try making with lean turkey Italian sausage instead of plain ground turkey. Perks it up even more.

  • I would like to have size of can of tomatoes? I want to try this also. And parboiling bell peppers? Maybe blanching them, but to actually cook them? I like to serve a whole stuffed pepper for each person, so I would think they would be mush if boiled that long and they would fall apart. But I might be wrong.

  • I have been making and freezing stuffed peppers for years. I always parboil the peppers but 5 min is too long. About 3 is good. Otherwise they are too hard. Ive precooked ingredients and not precooked, and precooked is better. Out of the freezer, heat, and they are ready.

  • I've not made this recipe yet, but I agree with AlDente that I would not par boil or pre cook anything either. It does sound very good.

  • I liked this recipe though I did not parboil the peppers. I sustituted Minute Rice, didn"t precook any of the stuffing ingredients, increased bsking time to 30-40 mins and it was great!
