Ingredients

  • 6 poblano peppers
  • 1 lb. ground beef
  • 1/3 C. chopped celery
  • 1 C. chopped onions
  • 3 cloves minced garlic
  • 2 tsp. black pepper
  • 1 tsp. ground cumin
  • 1 can diced tomatoes, divided
  • 1 1/2 C. shredded Monterey Jack cheese

Directions

Remove the tops of the peppers and core them. Combine the beef, celery, onions, garlic, pepper, cumin, and ΒΌ cup tomatoes in a bowl. Divide the mixture between the peppers and arrange them in the crockpot. Pour the rest of the tomatoes on top and cover. Cook on low for 8 hours. Top the peppers with cheese in the last 30 minutes until it is melted.
