Stuffed Salmon or Shrimp

I use the same stuffing for both - it has wonderful flavors that won't overpower the fish.

Ingredients

  • 1 lb. salmon filets or shrimp
  • 1 can fresh crab meat
  • 4 Tbs. olive oil
  • 1/2 stick butter
  • 1/2 C. bread crumbs
  • 4 lg. cloves garlic, minced
  • 1/2 C. fresh chopped flat leaf parsley
  • 1/2 C. Parmesan or Romano grated cheese
  • salt and pepper to taste
  • lemon juice to taste

Directions

Heat olive oil and butter, add garlic, parsley, salt and pepper, cook about 2 minutes. Add crab meat, cook just until it is well combined. Add bread crumbs and cheese, cook about 2-3 minutes. Depending on how you like your stuffing, you may want to add a bit more oil or butter. Remove from heat and let cool 10-15 minutes. Run your knife from one end of salmon to the other. Do not cut all the way through - you want to to be able to just fold over the salmon just to open it. Place 2-3 Tbs. stuffing inside and fold over to close it. Pour lemon juice over and place in a baking dish in center of oven rack. Place in the oven for 20 minutes in a 350-degree oven.If making the shrimp, just butterfly your shrimp, place in baking dish and place a tsp. of stuffing on top of each shrimp, again pour lemon juice over if you like. Shrimp will cook less time than salmon, only 10-15 minutes.
