Stuffed Summer Squash with Gourmet Sausage

This is a fantastic and delicious way to use up your garden goodies! The flavors compliment each other so well. This recipe really hits the spot, and will be the topic of your meal conversation!

Ingredients

  • 3 sm.yellow squash
  • olive oil
  • salt and pepper
  • 3 gourmet sausage links
  • 1/4 C. diced onion
  • 1/4 C. diced celery
  • 1/2 Tbs. crushed garlic
  • salt and pepper
  • 1 handful fresh parsley, chopped
  • 3 day old hamburger buns
  • 1 C. shredded sharp cheddar cheese

Directions

Preheat oven to 350 degrees. Wash and de-stem 3 small yellow squash. Slice diagonally, remove seeds, and place on cookie sheet,. Brush with olive oil and sprinkle with salt and pepper. Cover tightly with foil and bake 20-25 minutes. When done, allow to cool. Meanwhile, add 1 Tbs. olive oil to skillet. Remove sausage from casings and crumble into skillet. Sauté with onion and celery, garlic, salt, pepper and parsley. Allow to cool a little, then add 1/2 cup cheese and 3-day-old hamburger buns, torn into pieces. When ready, stuff squashes with stuffing, top with more shredded cheddar cheese, and bake in oven for an additional 15-20 minutes.

  • When you pre-bake the squash, make sure to put it skin side down on cookie sheet, prior to covering it tightly with foil. This will caramelize the squash quite nicely. :)
