My family likes sweet potatoes like this instead of baked with all the marshmallows on top. It is very good and if sweet potatoes are a must for your Thanksgiving you should definitely try this recipe.

Ingredients

  • 2 large sweet potatoes
  • 4 oz. cream cheese
  • 2 Tbs. butter
  • 2 Tbs. heavy cream
  • 1 Tbs. brown sugar
  • 1 Tbs. maple syrup
  • 1/4 tsp. cinnamon
  • 1/2 C. Emerald Nuts, Pecan Pie flavored pecans, chopped

Heat oven to 425 degrees. Cut potatoes in half, lengthwise, place cut side down on baking sheet, bake 30 minutes or until tender. Let cool and scoop out center of potatoes into bowl, but leave enough to have a 1/4 inch to 1/2 inch thick shell. Add cream cheese, butter, cream, brown sugar, syrup and cinnamon to potatoes in the bowl and mash until smooth. Spoon mixture back into potato shells. Top with the pecans. Bake 8-10 minutes or until nuts are toasty and potato is heated through.

  • This recipe is awesome! My family had trouble focusing on the rest of the meal (which was great) because they kept saying "I just can't stop eating the sweet potato, because it's so good." I have requests to make sure I include it in the Christmas menu.
