Stuffed Tomatoes
Ingredients
- 8 med. tomatoes
- 2 onions, finely chopped
- 2 Tbs. parsley, chopped
- 3 Tbs. olive oil
- 2 stalks celery
- 1 C. rice
- tomato pulp
- 1 C. water
- salt
- pepper
- 1/2 C. mushrooms
- parsley
- 1 can tomato sauce
Directions
Scoop out tomatoes. Reserve tops and pulp. Sauté onion in oil until transparent. Add rice and cook for 2-3 minutes. Add cut up tomato pulp, celery, mushrooms, parsley, water, salt and pepper. Cover pan and simmer on top of stove for 30 minutes. Stuff tomatoes and place in baking pan. Mix can of tomato sauce and water and add to pan before baking at 350 degrees in oven for 1 hour or more.
