These tomatoes are just like tacos except you are using the tomatoes instead! The tomatoes are filled with delicious cheese and are also mixed with savory beef.

  • 5 fresh tomatoes
  • 1 pound of lean ground beef
  • 1 yellow onion, chopped
  • 1 clove of garlic, diced
  • 1 pinch of garlic salt,
  • A pinch of ground black pepper to taste
  • 1 cup of shredded cheddar cheese

First, preheat the oven to 350 degrees. Then grease a 9x13-inch baking dish.
Cut the tops from the tomatoes and scoop out the pulp. Then transfer the pulp to a bowl and chop. Then reserve the tops of the tomatoes.
Next, heat a large skillet over medium-high heat. Cook and stir the beef in the hot skillet until it is browned and crumbly, 5 to 7 minutes then drain and discard the grease. Mix the onion, garlic, garlic salt, and black pepper into the ground beef, and add the reserved tomato pulp. Bring the mixture to a boil, reduce the heat to low, and simmer until it is thickened, 10 minutes.
Set the hollowed-out tomatoes into the prepared baking dish and fill each tomato with ground beef mixture and add an equal amount of shredded cheese to the top of the beef in the tomato. Then place the tomato tops back on the filled tomatoes.
Bake the tomatoes in the preheated oven until tomatoes are tender and filling is hot, about 20 minutes.
Let them cool off until easy to handle and then serve!
