  • 1/4 lb. butter
  • 1 onion, chopped
  • 1/4 tsp. pepper
  • lemon juice
  • 3/4 C. long-grain rice
  • chopped turkey gizzards
  • 1/2 C. raisins
  • 1/2 C. water
  • 1 1/2 lb. hamburger
  • 1 1/2 tsp. salt
  • dash allspice, optional
  • 1 C. boiled chestnuts, chopped
  • 1/2 C. walnuts, chopped

Rub cavity and outside of washed turkey with lemon juice, salt and pepper. Let stand while preparing stuffing. Saute hamburger and gizzards in butter with onion, salt and pepper. Stir in remaining ingredients and cover. Simmer slowly until liquid is absorbed.

Preheat oven to 450 degrees. Stuff turkey carefully, allowing for the swelling of rice. Brush the outside of turkey with melted butter. Stew or skewer and tie opening. Place in roasting pan with 2 C. water, and bake in oven for 1 hour. Reduce heat to 350 degrees and bake 3-3.5 hours longer, basting and turning frequently.
