  • 6 large yellow bell peppers
  • 1 lb. beef, Ground
  • 1 can tomatoes, diced
  • 1⁄2 C. white rice
  • 1⁄2 C. water
  • 1/2 tsp. salt
  • 1 tsp. Worcestershire sauce
  • 1 C. shredded cheese

Preheat the oven to 350 degrees. Cut the tops from the peppers and discard the insides. Boil the peppers for about 5 minutes and drain. Season the insides with salt. Brown the beef in a skillet until no longer pink. Drain the fat and add the tomatoes, rice, water, salt, Worcestershire, and a dash of pepper. Bring to a boil and reduce the heat. Cover and simmer 20 minutes until the rice is cooked and tender. Add the cheese and stuff the peppers with the mixture. Place the peppers in a baking dish and bake for 30 minutes until cooked through.
