Stuffed Zucchini

This goes great with steak or pork roast, or as part of a vegetarian meal.

  • 2 med. zucchini
  • 1/2 C. Italian bread crumbs
  • 1/2 C. Parmesan cheese
  • 3 Tbs. olive oil
  • 2 Tbs. minced garlic
  • 1 sm. shallot, chopped finely (I use half)
  • 1 tsp. cracked black pepper
  • 1 lg. tomato, diced
  • 1/2 C. shredded mozzarella cheese

Slice cleaned zucchini in half and scoop out center. Saute in olive oil with garlic and shallot. Mix with bread crumbs, Parmesan cheese and pepper. Stuff zucchini shells with mixture. Top with chopped tomatoes and mozzarella cheese. BakeĀ at 350 degrees for 10-15 minutes, or until cheese melts.

  • Yuuum, this is so good, but do you ever sometimes just stuff them with some finely chopped Bell Pepper and all the other ingredients except the bread crumbs and top it the same way? Nice change once in awhile. Let me know.
