Stuffed Zucchini Boats

- 1 large zucchini, cut in half lengthwise and seed removed
- 2 tsp. olive oil
- 1 small onion, chopped
- 1 lb. ground sweet Italian sausage
- 1/2 lb. ground chuck
- 1/2 C. spaghetti sauce
- 2 Tbs. garlic, minced
- Salt and pepper to taste
Preheat oven at 350 degrees F. Scoop pulp from zucchini halves to make a boat. Save zucchini pulp and set aside. Add olive oil, garlic and onion in skillet. When onion tenders, add sausage and beef then cook until browned then drain. Add basil and oregano to taste. Stir and add sauce. Remove from heat. Scoop meat mixture into boats and top with more sauce.
Using a 9-by-13-inch baking pan, line with foil and then add 2 inches of water. Place pan in oven and cook for 15 to 20 minutes or until zucchini is soft.
