Cooked to a perfect tenderness, this simple succotash recipe is something that you wouldn't want to miss out on. Great to curl up with on a chilly day or even to have outside in the warm sun.

  • 2 Tbs unsalted butter
  • 1 white onion; chopped
  • 3 C tomatoes; chopped
  • 2 C black beans
  • 3 C corn kernels
  • 2 small garlic cloves; chopped
  • Spring onions; chopped
  • Kosher salt

In a saucepan, melt the butter on medium heat. Add in the chopped onions and kosher salt. Cook for about 5 minutes until onions appear soft.

Then, add in the garlic until it becomes slightly brown. Lower the heat a little and then add in the corn, tomatoes and black beans. Allow the ingredients to simmer in the pan for 10 minutes or until the beans and tomatoes become soft. Stir occasionally.

Transfer the succotash onto a plate, garnish with the chopped spring onions and serve.
