  • 1 C. cooked, cubed turkey meat
  • 2 celery, chopped
  • 2 tart apples, cored and cubed
  • 1/2 C. chopped walnuts
  • 1/4 C. sour cream
  • 1/4 C. mayonnaise
  • 2 Tbs. chopped fresh parsley
  • 2 Tbs. lemon juice
  • 1 Tbs. honey
  • 1 Tbs. prepared Dijon-style mustard
  • 1/4 tsp. salt
  • Ground black pepper to taste

In a large bowl, combine the turkey, celery, apples and walnuts. Prepare the dressing in a small bowl by whisking together the sour cream, mayonnaise, parsley, lemon juice, honey, mustard, salt and pepper. Pour over turkey mixture and toss to evenly coat. Refrigerate until chilled.

  • I like that this recipe needs just 1 cup of turkey.

    I added 1 can chopped water chestnuts, 1/4 teaspoon dillweed and 4 hard-boiled eggs; and used 3 stalks of celery.

    Skipped the apples, walnuts, parsley, lemon juice, honey and mustard.
