  • 3 lb. pork roast
  • 1 C. carrots, diced
  • 1 small yellow onion, diced
  • 1 stalk of celery, sliced
  • 1 C. mushrooms, sliced
  • 4 cloves of garlic, minced
  • 1 habanero, diced
  • 1 Tbs. thyme, finely chopped
  • 2 sprigs of fresh thyme
  • ⅓ C. chicken stock
  • ⅓ C. olive oil
  • 1 tsp. sea salt
  • 1 tsp. pepper
  • * you will need a strings to tie the turkey together

Preheat the oven to 375 degrees. Split the pork down the middle to butterfly it and pound it flat with a food mallet. Saute the veggies and place them in the middle of the pork and roll it. Coat the pork with olive oil and sprinkle it with salt and pepper. Tie the pork closed. And place in a pan. Place the thyme and chicken stock in the pan as well and bake it for 35 minutes. Let it cool for 10 minutes before cutting into it.
