Sue's Blueberry Muffins

- 1 1/2 C. Self rising flour
- 3/4 C. sugar, plus 1 T for top of muffins
- 1/3 C. vegetable oil
- 1 large egg
- 1/3 -- 1/2 C. milk
- 1 1/2 t, vanilla extract
- 1 C.fresh blueberries
Heat oven to 400 degrees.
Line eight muffin cups with the paper liners
Combine flour and ¾ cup of sugar mixing thoroughly
Place oil and egg in a one-cup measuring cup, then fill cup the rest of the way with milk.
Add vanilla extract and mix until well combined.
Add milk mixture to the bowl of dry ingredients using a fork to mix it together.
Do not over mix.
Fold into muffin tin.
Sprinkle a little sugar on the top of the batter.
Bake fifteen to twenty minutes until a toothpick stuck in the muffin comes out clean.
