  • 2 eggs, beaten
  • 3 large or 4 small ripe bananas, well-mashed
  • ¼ C. buttermilk
  • ¼ C. melted shortening
  • ¼ C. Splenda
  • 1 tsp. vanilla
  • 2 C. flour
  • 1 Tbs. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt

Directions

Mix all ingredients well enough to moisten dry ingredients. Pour batter into a 9 x 5 loaf pan, greased on bottom only. Bake at 350 F for one hour.
