Sugar Free Carrot Cake

Made with frozen juice concentrate and a carrot mixture of pineapple, nuts, and sesame seeds.

Ingredients

  • 2 C. flour
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • Carrot Mixture:
  • 2 C. grated carrots
  • 1 C. crushed pineapple, drained
  • 1/2 C. crushed nuts
  • 1/2 C. sesame seeds
  • 1-1 1/2 C. coconut
  • Egg Mixture:
  • 3 eggs
  • 1/2 C. oil
  • 1/2 can frozen apple juice concentrate

Directions

Add the carrot mixture to the egg mixture, then add the flour mixture. Bake at 350 degrees for 1-1 1/4 hours in an angel food, spring form or Bundt cake pan. Remove from pan and cool on rack.

  • This is a great receipe for a non dieabetic. Carrots are high in sugar alone. You might get away with using fresh fruit but still naturally high in sugar. So change the label to read Great Carrot Cake and you will have it.

  • Ran this thru a nutrition analysis. Used 12 serving, which is small. Most of the carbs were from flour and apple juice (23 of 34 total). Calories are 337 with big contributions from nuts and oil. I used unsweetened coconut flakes. While not really diet material, this serving as a snack, will not blow your head off. Must don't add it to a carb loaded meal.

  • None of your recipes provide accurate (if any) info re nutritional values. Since you actually bill them as 'lo cal' or 'sugar free', this is shocking !!!! Recipe 4 LIVING??? I think not!

  • Being a diabetic I was appalled that this recipie was labeled as"sugar free" It contains coconut which is very high in sugar,frozen juice concentrate which is nothing but sugar, and canned pineapple,which is also very high in sugar.
