  • 2 eggs
  • 3/4 C. extra virgin olive oil
  • 1 3/4 C. coconut milk
  • 1 Tbs. vanilla extract
  • 1/3 C. dry red wine
  • 1 C. white whole wheat flour
  • 1 C. unbleached flour
  • 1 C. cocoa powder, unsweetened
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. sea salt
  • 1 C. dark chocolate chips

Preheat your oven to 350 degrees F. In a large mixing bowl, beat eggs. Stir in milk, vanilla and white wine. Add whole wheat flour and stir until mixed. Repeat stirring steps for unbleached flour and cocoa powder. Add baking powder, soda and salt. Stir in chocolate chips. Pour in prepared pan. Bake for 20 to 25 minutes. Rotate pan. Bake for 10 to 15 minutes. Remove from oven and let it cool before cutting into squares.
