Ingredients

  • 1 3/4 C. flour
  • 2 C. Splenda
  • 3/4 C. carob
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/4 C. I Can't Believe It's Not Butter Spray
  • 1 C. fat free milk
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 4 oz. Eggbeaters
  • 1 C. strong black coffee (2 tsp. instant coffee plus 1 C. boiling water)
  • Frosting:
  • 1 box Jell-O sugar free instant pudding
  • Fat free milk

Directions

Combine dry ingredients, and then add the rest. Beat at medium speed for 2 minutes. Batter will thin. Bake at 350 degrees for 35 to 40 minutes. The cake should be very moist after baking. To make frosting, add fat free milk a little bit at a time to the pudding until you get the smoothness you want.
